Birthday Gift



未到十一月, 便收到老友寄來的生日禮物 ~ 煙斗.
感謝 Andy 送我厚禮! (還以為你會送我一支 montrachet)
相信要一段時間, 才能學懂如何抽煙斗,
聽聞初學者常被灼傷, 舌頭感到刺痛.

煙斗, 也讓我想起仙遊多年的爺爺,
爺爺很疼我兩兄妹, 零用錢, 玩具, 愛心從不缺,
為討爺爺歡心, 小時候曾以多月積蓄買了一支煙斗賀壽,
款式是殖民地官員常用那種, 依稀記得是 dunhill 的出品.
自從爺爺患上危疾, 已甚少抽煙,
而那支煙斗大概也隨他西遊吧,
在極樂世界, 抽煙斗比抽香燭時髦得多!

別神化KRUG

檳,由葡萄釀造,氣泡滿滿的,是法國農產品,存世的原因無非是滿足人類口腹之慾。不過,如在飲食之上加進生活態度,那香檳就不只是香檳,而是品味和文化。

現在幾乎所有香檳品牌都循這方面走,極力將品牌與消費者生活結合,速成手法不外乎與Culture Icon拉上關係,最近LVMH集團的香檳品牌Moet et Chandon 為1998 Dom Perignon (有稱香檳王)製作廣告,操刀的不是尋常攝影師,而是時裝界典堂級人物Karl Lagerfeld。

若然閣下從未聽聞Karl Lagerfeld這個名字,未看過這位束馬尾穿緊身褲子的長者的照片,那你肯定是火星人,昨天才來到地球定居。

在行銷世界裡,無論產品有多完美,缺乏有效的巿場行銷策略,產品就難以竄紅。深明此道者莫過於LVMH集團,在他手上的著名品牌多如銀河沙數,莫說時裝和珠寶品牌,就是香檳裡的貴族,都被盡收名下,例如為人熟悉的Moet et Chandon(中譯酩悅)和Veuve Clicquot Ponsardin(中譯凱歌,簡稱vcp)、歷史悠久的Ruinart,還有香檳王者 ~ KRUG。

KRUG向來給人高傲,超凡出世的感覺,但被LVMH收購後,行銷作風有明顯的改變,不單更換新的酒標,而且不時與時尚產品來個Crossover。前陣子,KRUG與著名豪華行李箱訂造商 Pinel & Pinel首度攜手創作出一輛極級行李箱「KRUG TRUNK」,全球限量生產30輛,其中2輛於香港發售,盛惠港幣350,000元。

這輛KRUG TRUNK需經人手製作700小時,門上以鎳合金字母鉻上KRUG品牌標誌,亦可按買家心意鉻上其名字或家族標誌。所有餐飲配件都是名師設計,例如Francois Bauchet設計香檳冰鎮器、Rina Menardi的餐具、Guy Degrenne的玻璃杯、Daniel Eltner的筷子座。總之是行李箱,也是藝術品,奢侈與否,見仁見智。

很多「老」酒友難以接受這樣的行銷手法,覺得破壞了KRUG在他們心目中原有的超然形象。自從KRUG更換了沿用多年的酒標,KRUG主席 Remi KRUG先生就不斷收到客戶的抗議電郵,說新酒標很醜!也有不少長期客戶覺得KRUG現在的行銷手法只重華麗,欠缺以往的傲氣!

「沙士比亞的劇作傳頌百年,很多劇團都演過,不同劇團的演繹為劇作注入新元素,新驚喜,可是沙翁作品的精髓不曾改變。同樣,KRUG雖然換了外衣,但靈魂仍在,味道特色依然!KRUG就是KRUG。KRUG雖被譽為香檳王者,但請不要把KRUG神化,香檳是釀來喝的,釀來享受,不是拿來膜拜。」Remi KRUG說。

他解釋,巿務策略的作用是將KRUG的味道與僱客連在一起。KRUG要做到穩定與驚喜並重,當中需要很高的經營技巧,如果推廣手法能提供更大新鮮感,何樂而不為,任何品牌形象都要因應時代而脫變。

「我們總不能把品牌永久鎖在夾萬中拒絕求變。」Remi Krug說。

KRUG旗下有五個系列:Krug Grande Cuvee、Krug Rose、Krug Vintage、Krug Collection及Krug Clos du Mesnil。Grande Cuvee是Krug是五個系列中較便宜的(雖說便宜,但也比一般不列年份的香檳貴上三倍),但Grande Cuvee卻最能反映KRUG高超的釀酒技巧和風格,由多達五十種已陳年六年至十多年的舊酒混和而成,在上巿前,還要待在酒窖陳放6年以上,故特別成熟芳香,散發著乾果和烘多士的香味,餘韻悠長細膩。

這樣的極品香檳,筆者倒不介意天天膜拜,天天喝過飽。

巴金病逝



中國文學巨匠巴金在上海病逝,終年101歲。巴金在1904年出生,是四川成都人,曾到法國留學,返國後從事文學創作,最膾炙人口的作品是激流三部曲-家春秋,抗日戰爭爆發後,巴金在各地致力於抗日救亡文化活動,編輯吶喊,救亡日報等報刊,在文化大革命期間,曾受沖擊,他在七七至八三年,出任中國作家協會主席,1983年及2003年當選全國政協副主席,03年國務院並授予巴金人民作家的榮譽稱號。

1985 Domaine Pierre Ponnelle Clos De La Roche

顏色很健康,滲出加應子、野味肉香,初段入口有 Tannin 仍濃,大約半小時後開始收斂,但再過半小時後口感越來越甜美,過癮。

1992 Olivier Leflaive Freres Montrachet

很濃杏仁,蜜糖香,香氣極像 sauternes,初段口感如油,很滑很濃,三小時後顯現酸度,餘韻悠長,好喝。

一年一度的「Decanter世界葡萄酒大賞賽」剛剛完滿結束,是次比賽是藉由突出地區的風格,及「產區的風土條件(terroir)」的影響性,而在每年年底慶祝葡萄酒世界擁有這麼多差異性的一項比賽。

評審團由二十多位最令人尊敬的世界級著名酒評家,如Steven Spurrie, John Radfor等組成…..首先將葡萄酒先按產區分組,然後選出分組傑出者,再進入爭取國際性的大獎。

今年初嚐大閘蟹

1988 Drappier Grande Sendree Champagne
金黃色,很熟,有烤土司及蜜糖香,入口較濃,氣泡細密,酸度足,好飲,合配大閘蟹。

2005 Elderton Wines Chardonnay Unwooded Australia
青黃色,梨香及檸檬香,口感很輕,適合做開胃酒。

2002 Castroventosa El Castro de Valtuille Bierzo Spain
藍梅及桑子香吸入,口感丹寧很滑,有喝pinot noir的感覺,只是餘韻酸度稍高。

2003 Domaine de Mourchon SEGURET Cote du Rhone Villages
野味及肉香,入口有勁度,幾好。

1990 Chateau Siran Margaux
茶葉及菰菌類的香味,輕微西梅香,入口很淡,欠缺果味,一般。

2001 Feudi di San Marzano Primitivo di Manduria Sessantanni
60年老藤,紫黑色,很濃提子乾香味,但酒精度很高,有點嗆鼻,入口很濃而甜,像port。

2003 Zenato S. Cristina Chardonnay IGT del Veneto
金黃色,香氣帶蜜糖,而酒精度明顯,有被熱過的跡象。

【香港】二十幾家莊酒最近獲西班牙駐港商務專員公署安排,來到香港進行業務推廣,他們大多來自Ribera del Duero這個耳熟能詳的產區,但吸引不少香港酒商注意的卻是一些來自較陌生產區的出品,例如Mancha、Yecla、Bierzo,以及盛產Albarino白酒的Rias Baixas。

在只供業內人士參與的展銷會中,有個擺空城計的攤位很受青睞,酒商自斟自酌的討論放在案頭的兩款紅酒,時而估量葡萄品種,時而猜度批發價格,但酒莊代表卻不知所蹤,欲問無從。

「喝吧,Bierzo的酒充滿熱情,即管把酒杯倒個滿,我們是來交朋友的。」一位穿著通花襯衣的男士搭訕。男士名叫David Bosch,是這家酒莊Bodegas y Vinedos Castroventosa的業務總監。David搭訕過後,又急步走到另一個攤位搭訕,可像忘記了是來跑業務的。

David Bosch帶來兩款紅酒,分別是Valtuille和El Castro de Valtuille,都以Mencia釀造,而只有在最優秀的年份,Bodegas y Vinedos Castroventosa才以百年老藤釀造Valtuille,年產量只有一千箱,得到很高的評價。2001 Valtuille呈寶紅色,香氣很開放,特別是紅莓和桑子香味非常吸引,令人聯想起Pinot Noir,但口感卻很扎實。最近有研究顯示,Mencia與Cabernet Franc有血緣關係。

Bierzo位於Castilla Y Leon自治區的Leon省,由小城鎮組成,人口不過七萬人,以種植Mencia葡萄為主。Bierzo於1989年才成為DO級法定產區,同年Pereira家族創立Bodegas y Vinedos Castroventosa,該區目前大約四十家酒莊。

然而,Bierzo為人所熟悉,都是拜Alvaro Palacios所賜。Alvaro Palacios雖然在Priorat釀造問鼎新一代西班牙酒皇的「L’Ermita」,卻於1998年聯同姪兒Ricardo Perez在Bierzo西面的Corullon鎮物色莊園,翼年開始以傳統品種Mencia釀造葡萄酒,獲得極佳的口碑。

「無論是西班牙本土酒商或是外資企業,都希望找到一塊能夠給予酒界驚喜的土地,Ribera del Duero和Priorato已經不能滿足他們,他們轉而在西北地區找尋商機,Bierzo區就是其中之一。」一位Ribera del Duero區的莊主說。

「Bierzo和一些小產區不乏精品,擁有成為Cult Wine的條件,評分高,產量少,只要稍加炒作,售價不難翻幾翻,但那些酒莊就是不想Cult起來,他們視葡萄酒是令人歡愉的飲品,若單純以價錢作為衡量標準,等同沾污了釀酒者的熱情。」David回來搭訕。

David表示,西班牙葡萄酒的復興從沒有間斷,當人們以為Ribera del Duero 、Rioja與Priorat的瘋潮稍為冷卻的時候,另一些酒區卻開始受到追捧,可幸的是,大多數酒莊「暫時」保持理智,堅持不做只在拍賣活動出現的「觀賞酒」,葡萄品種也非一雙玉臂千人枕的Cabernet Sauvignon、Merlot、Chardonnay,而是保留獨特地區風味的西班牙品種。

「無論如何,Bierzo區的葡萄酒已在國際酒壇漸露頭角,只要同業們潔身自愛,前路還是一遍光明的。」David說。

枝梗爛葉的味道,只有少少莓香,入口丹寧苦澀,有點苦。

2000 Reserve de la Comtesse
黑加倫子橡皮糖和草莓香味,口感幾滑,可惜酒精少少嗆鼻,餘韻幾好,不俗。

2000 Chateau D'Armailhac
紫紅色,輕微咖啡和雪茄盒香,典型Mouton Style,新桶味和枝梗味很重,口感卻薄,而且餘韻有點苦,一般。

Second Flight Blind Tasting

1999 Chateau Grand Puy Lacoste
巧克力及藍莓香,入口枝梗味很強,青澀,酸度高,不吸引。

1999 Chateau Pichon Lalande
奶油、榛子、咖啡香,口感較緊,餘韻有點苦,一般。

1999 Chateau Lynch Bages
香味與LALANDE很相似,同樣是咖啡香,還有點Liquer香味,但較earthy,丹寧好強。

1999 Chateau Lafite Rothschild
香味很像吉百利奶油巧克力,咖啡及toffee香很強極,medium-bodied,很新派,像新世界酒,甜酸度平衡,很滑,餘韻相當長,而且持久力很強。

Others

1992 Warre Late Bottled Port
葡萄乾香味,微微炒果仁香,酒精嗆鼻,不吸引。

1996 Chateau Clerc Milon
黑莓香吸引,開始出現陳酒香味,但入口丹寧亦硬,ok。

2003 Normans Encounter Bay Chardonnay
黃金色,典型澳洲蔗水,也有點梨香,ok。

2001 Chateau Filhot Sauternes
淺黃色,杏仁、蜂蜜、燉蛋香,酸度低,但釀得很clean,沒有古怪味,整體不俗。

The Optimum Temperature

Zero Vibration

Advanced Computerized Humidity Control System (ACHCS) ensures the correct humidity level is maintained to prevent any possible and slight damage. ACHCS is an essential module of our CMS service.

Absence of ultraviolet light

Any exposure to ultraviolet or sunlight will definitely spoil any wine, so it is important to store wine in a dark cellar with no ultraviolet light available. The Anti Light Contamination Unit (ALCU) ensure the perfect environment for your collection
