老而彌堅

24年過去,這瓶 La Grande Rue 的顏色變得很淡,但香氣仍然清新,顯現新鮮小紅莓香氣,微微花香約隱約現,也有一點野味的香氣,口感稍為單薄,但甜酸度平衡,但餘韻短暫。其實,酒主早有心理準備,對這瓶當時只是 Premier Cru 的老 Burgundy 沒有多大期望,結果比預期的好,也是我們喝過數個年份的 La Grande Rue 之中,比較好喝的一瓶。BTW,小弟負責開瓶,木塞滿有彈性,一流Condition,這次應該向台灣的大同亞瑟頓作出嘉許。酒主說,下次給我們喝 1989 Bouchard Pere et Fils La Romanee,引得我們口水直流。

關於 La Grande Rue
可譯為「大道」或者「大街」, Romanee-Conti 和 La Tache 之間,佔地約為1.65公頃,由 Francois Lamarche 家族獨家持有。La Grande Rue 最初只是 Premier Cru 級,直到1991年,法國官方再為 Burgundy 評鑒酒園時,該園被評為「Grand Cru」。La Grande Rue 大概是舊派的釀法,並非肥大肉厚的搶分酒,年輕時酸度非常高,顯得比較纖瘦,其年產量控制在5000瓶左右。La Grande Rue 與 Romanee-Conti 和 La Tache 同時 Grand Cru,雖然我未有機會喝 Romanee-Conti,但根據喝幾個年份 La Tache 的經驗,La Grande Rue 的質素與其鄰居仍有很遠距離。

「全球廿七個國家和地區約七千名紅酒商,五月將雲集本港,參與一個在灣仔會展舉行的紅酒博覽會活動.....主辦單位「亞太地區紅酒與烈酒商展」行政總裁Robert Beynat昨日在記者會表示,本港在○四年的紅酒銷量達到二千一百三十萬樽,相對九九年上升三成,而預計到○九年,本港的紅酒銷量將再增長三成。他指出,飲紅酒是世界潮流,本港女性收入增加,追求高品味生活享受,紅酒市場過去由男性為主的消費模式,已改變成男女消費者比例各佔一半。」

「師道無存生小賊 世風日下打盲毛­」

【太陽報專訊】三名斗膽小賊,昨日竟然在光天化日之下,在鬧市當扑頭黨,當街搶走一名青年的手機,得手後逃跑,被劫青年不甘損失,尾隨狂追,在兩名保安員的協助下,擒獲其中兩名疑匪,其中一名十七歲,另一名則只有十四歲。

就在數日之前,旺角警方特別職務隊與反黑組,採取代號「滅蟲」行動,調查在西九龍區接連發生多宗上學學生被劫案,發現四名賊人藉詞指事主曾經欠錢,拖入後巷強行搶劫,並稱之曰「打盲毛」,在後跟蹤的探員見狀,馬上現身採取拘捕行動,將涉嫌四匪一網成擒。被捕四人有不同的黑社會背景,其中包括兩名中三及中四學生,初步懷疑涉及約五宗行劫案,劫財近萬元。

短短數日內,香港便出現多宗小賊打劫的事件,其中還包括了好幾個在學學生,情況之嚴重,實在值得我們注意。香港自七十年代以後,經濟環境日漸好轉,社會由衰轉盛,在惡名昭著的箍頸黨和湯死牛黨銷聲匿跡之後,小毛賊在香港已不復多見,今日匪蹤重現,亦標誌?香港將進入另一亂世。

可以說,如果在經濟環境好的時候,人們安居樂業,鋌而走險的人也不多,但如果社會經濟轉壞,失業率高,人們生活困難,小偷小摸的情況也一定會有所增加。今日香港表面看來經濟不錯,但由於貧富懸殊,實質上仍有不少人生活過得極為艱難,所以,罪案增加也是可以想像的。

但是,較為特別的是,除了犯案者年紀有愈來愈年輕的傾向外,更有不少人是在學學生,這說明他們並非為生活所迫而犯罪,而是學校教育的失敗,是教師的失責。

近年來,有關學校的負面新聞實在不少,除了政府認為教師的質素良莠不齊,有需要進行語文基準試外,也出現了因收生不足而要殺校的問題;更令人印象深刻的是教師為爭取權益,動輒集體抗爭,教統局為平息紛爭,大撒金錢,收買人心。可以說,教師的形象再也不復當年的尊嚴,在人們心目中,清高的知識分子已變成爭名逐利、錙銖必較的學店夥計了。

由於教師不再愛惜自己的形象,學校也忽視了道德基礎教育,以往東方人社會尊師重道的傳統已不復存在,禮義廉恥已成為眾人的笑柄,所以,校園內男女談情蔚然成風,恃強凌弱的情況更是司空見慣。故今日之學校,已無法成為培養年輕一代成才的苗圃,反而成為青少年犯罪的溫床。

我們可以肯定地說,?師並非普通的職業,所以,他們有權得到更多的尊重以及更多的保障,但同時,社會也有權對?師提出更高的要求,要求他們成為德才兼備的社會楷模。古賢曾說過:「文官不愛財,武官不怕死,天下太平矣!」於今人來說,則是:「學生尊師,?師重道,天下太平矣!」

今日學生不好好讀書,去當小賊、打盲毛,原因正在於師道不存,世風日下。所以,教統局也要負起一定的責任,他們不能將教學水平作為評核學校的唯一標準,更應在學校重新建立尊師重道的傳統,樹立教師的尊嚴,而教師以及教育團體則不應該動輒以街頭鬥士自居,他們應該尊重自己的地位,將教育工作當成最高的奮鬥目標,才不枉自己選擇了一個如此高尚的職業。

喫鏞記





鏞記.一個在餐飲業內外都十分響亮的名字,是經典粵菜的高手,尤以豐腴美味的廣東燒鵝著名,令遊客來到香港怎樣都要喫一次鏞記才安心踏上歸途。不過,鏞記雖譽滿全球,但其食物和服務質素因人而異卻是公開的事實。

人們都明白,喫中式名店喫得合意的其中的一個條件,是你必須與店中某某管事稔熟,那食物和服務質素才有保證,慕名而來的「生客」大多敗興而回。這大概是華人的天性,講求人情,講求面子,不講制度。

我也曾受過鏞記的「禮遇」,深明此道,但又無力改變現狀,唯有採取迴避態度,最少有五年沒有光顧鏞記,直至太太的朋友最近當上鏞記公關大員,有了人際脈絡,才夠膽再喫鏞記。

昨天一行十四人,帶了十二瓶酒,浩浩蕩蕩殺上鏞記,而菜式則由經理代定,大概都是鏞記的名菜,包括:松子雲霧肉、白灼豬心蒂、椒鹽海參扣、鮑魚豬肚雞湯、秘製燻鵝、鮮百合蝦餅、肘子浸莧菜、油浸倉魚件、紅蟹泡飯、迷你馬拉榚盞、奶皇煎堆和鮮果拼盤。飯局後段再加碼,點了生炒芥蘭、鏞記招牌炒飯、太子撈麵及金釀豆腐。單價加小費,約HK$3750,很合理。

原定的菜式都非常好吃,特別是秘製燻鵝,端上桌上已傳來陣陣茶葉芳香,入口嫩滑都不得了,醃製入味,咬咬骨頭也過癮。不過,我們加碼的兩道菜卻是敗筆,金釀豆腐心仍是冷,太子撈麵則鹼味猶在。雖然這兩道菜未如理想,但我們對整體食物質素都滿意。服務方面,尚算合格,唯我們的桌子太小,難以容納十四人,動身下筷,顯得有點擠迫。

用餐期間還有一段小插曲,經理走來與在座一位朋友攀談,原來他們早已認識,經理隨即拿來一盤免費的燒鵝頭鵝頸。你看,人情和面子有多重要!

至於酒品,我喜愛 1986 Ducru Beaucaillou 的沉厚複雜和 1989 Chasse Spleen 的平易近人,1994 Montrose 也出奇地好喝,而 1994 Haut Brion...唉...。

極品鹵鵝肝



上周五吃過不飽肚的日本料理後,
一行八人吃夜宵續攤,
由分域街徒步往位於馬師道和謝斐道交界的潮州村
為的只是那盤甘香豐腴的鹵水鵝肝,
黃沙肝口感滑溜非常,真是人間極品,
唯鵝肝的膽固醇和脂肪含量也是人間至極,
總之小吃多滋味,多吃壞肚皮!

例行火拼日..............(製作中)




老友之中,有兩位貪玩兼好喝的仁兄,
分別是位骨科醫師和經常留在大陸的港商,
醫師和港商的工作很困身,又要照顧愛妻愛兒,
故每月只能騰出一,兩個晚上跟我們聚聚,
通常都選在星期四或周未,我們稱之為”例四”及”例六”,
每到例四或例六,大家都會打醒十二分精神,
因為火拼日的戰況一般都相當慘烈,總會發生大大小小意外,
前陣子在醫師慶生會就打破了一瓶 1997 Chateau Suduiraut,
而在剛過去的例四,八個人喝了十三瓶美酒,
喝得金星繞頭,小弟回家後不支昏睡,
另一位則喝到第十一款酒時已開始失去知覺,
在歸途上還打破了背包裡的葡萄酒,染得背包通紅,
被謀殺的那支酒是....Claude Dugat Gevrey Chambertin ...
殺手似乎很內疚,今早還找我懺悔,

Thank-you for contacting us regarding the Tapanappa Whalebone Vineyard 2003 Cabernet Shiraz that you tasted recently in Hong Kong.

I have attached to this email a brochure that will enable you to understandmore about this exciting new venture that was entered into by Brian Croser,the Cazes family from Chateau Lynch Bages in Bordeaux and the Bollinger family from Champagne only 3 1/2 years ago.

In it, you will see that the name Tapanappa can roughly be translated fromits Aboriginal roots as meaning "stick to the path". The name was taken fromthe Aboriginal name for a sandstone formation that exists in the FleurieuPeninsula which is a region that is very close to Brian Croser's heart.

As for our expectations for this project, you must first understand that itwas born out of a desire that all three partners have to seek out the bestterroir and to produce fine wine that reflects it accurately through the useof a combination of the right varietals, adapted viticultural practices andsensitive oenological techniques. Therefore, everything is undertaken with aview to maximising quality and giving the wine the freedom to express itsown character. This is a very time-consuming and costly process that meansthat this project will always remain limited in terms of quantity. It ishowever the three shareholders sincere hope that Tapanappa will serve as aflagship for the image of Australian fine wine around the world.

想不到香港竟然有.........



2004 Didier Dagueneau Jurancon Les Jardins de Babylone Southwest France 500ml

盛惠 HK$1,258

被喻為盧瓦爾野人(wild man of Loire)的 Didier Dagueneau 一直希望釀造甜酒,故在 2002 年時在 Pouilly-Sur-Loire 進行實驗,雖然效果良好,酒質尚佳,但問題是無法歸入故鄉的法定產區。Didier Dagueneau 唯有在庇里牛斯山脈(Pyrenees)以南另覓一幅葡萄園,名為 Babylone,並在那裡稙種 Petit Manseng。

不幸地,第一個年份 2003 年受到木塞細菌感染,大部分酒壞了,但 Didier Dagueneau 沒有氣餒,終於在 2004 年釀出極佳的甜酒,這就是 Jurancon Les Jardins de Babylone 誕生的原由。

想不到竟有香港酒商願意引進這款冷門甜酒!

三大巨頭的傑作 Tapanappa


澳洲名莊 Petaluma 的 Brian Croser、Lynch- Bages 的掌舵人 Jean Michel Cazes 和香檳貴族 Societe Jacques Bollinger 合資在澳洲釀酒,不論是好奇還是崇拜,任何一位愛酒人士看到這個組合都會為之心動,想一窺三大絕世武功集於一身的葡萄酒,是否真的能夠獨步天下。

系出名門有個好處,單是酒莊的歷史背景就可扯過大半天,聲名很值錢,不值千金,但也佔了酒價的很大比重,即使有時酒質不怎麼樣。昨天在一個品酒會上,曾獲侍酒師比賽冠軍的主持人便剎有介事談到這款名叫 2003 Tapanappa Cabernet Shiraz Whalebone Vineyard Wratton Bully South Australia 的背景,談了好一陣子,記者們很有興趣,但地區特色、釀酒方式和葡萄藤年齡等資料欠奉。Anyway,喝過再說...

2003 Tapanappa Cabernet Shiraz
呈紫紅色,以 2003 年這較新年份來說,Tapanappa 的酒色不算深,帶著葡萄乾、椰油、杉木、巧克力、香料、咖啡和肉桂等香氣,香氣尚算複雜,以木桶系香氣較為突出;中度口感,有點 Dry,口腔留著點點莓子的酸味,約隱約現,及後酒精感變強,有喝Port的感覺,餘韻中規中矩。總括來說,前段頗精緻,後段則仍是肥大肉厚的南澳酒。酒是不俗,但價錢那會便宜,盛惠 HK$488。

Wrattonbully 在南澳產區 Coonawarra 的南面,以前名叫 Koppamurra(命名問題曾惹來不少爭議),土質屬於俗稱 Terra Rossa 的紅色土壤,氣候介乎 Coonawarra 和 Padthaway 之間,但濕度較這兩區為低,而霜害的威脅亦較低,地下水源充足。三大巨頭在 Wrattonbully 合資買下 Whalebone Vineyard 莊園,葡萄園的面積只約八公頃,這裡曾是古代海崖線,聽聞莊園的地窖藏了一尾鯨魚的化石。

Tapanappa 意即 “stick to the path”,究竟是緊守信念、遵從風土,還是承傳歷史,我可弄不清楚。釀酒過程由 Brian Croser 負責,採用自然種稙法,即不作人工灌溉。2003 年是首個面世年份,釀自三十年葡萄藤,混合比例是 70% Cabernet Sauvignon,20% Shiraz 及 10% Cabernet Franc,在新法國桶陳化二十個月,不作過濾.酒精含量達到 14.5%。2003 年只釀造 950箱,三分二外銷。

The endemic violence which has afflicted the south of France has now spread to the Aude region as winemakers stormed a major Bordeaux negociant based in the area.

Just after 6pm on Tuesday night a small team of CRAV (Regional Committee for Viticultural Action) activists burst into the offices of Oeno-Alliance, a Bordeaux-based wine negociant, prevented employees from leaving and opened the valves of vats stored on the premises.

CRAV, which later claimed responsibility, said it had destroyed 40,000hl of wine. Other reports put the figure at around 15,000hl.

Oeno-Alliance is a subsidiary of Andre Quancard, one of the top 10 Bordeaux negociants. Although it deals mainly in French wine, it also sell Spanish wine in Russia from its offices and winery in Vinassan, near Narbonne in the Aude

'Foreign wines, like those the Spanish trucks are bringing in every day, are taking our livelihoods,' said one CRAV activist.

This is the latest in a series of what the French press call 'commando actions' which have been escalating in the region.

喝新年份的Louis Latour



昨天參加了 Louis Latour 的品酒會,酒莊總裁 Louis Fabrice Latour帶來 8款 2004年的白酒和 5款 2003年的紅酒.當然,在 cote de beaune,白酒的名聲總是較紅酒高得多,這天覺得比較好喝的是 Meursault 1er 及 Corton Charlemagne.至於該區唯一的 Grand Cru 紅酒 - Corton,
素質卻與夜丘的出品有很遠距離!

BTW,與 Louis Fabrice Latour談到即將在香港舉行的 Vinexpo,問他屆時會否再來香港推廣酒品,他說:”作為業內人士,都希望這個盛會能夠順利舉行,但其實我也不知 Vinexpo對我們的幫助有多大,故暫時未知會否訪港!”

礦物味重,只有少許桃子的香氣,口感不俗,甜酸平衡,ok。

2004 Louis Latour Meursault
熱情果香,入口酸度很高,瘦削。

2004 Louis Latour Puligny Montrachet
淡黃色,主要是奶油香氣,果香不顯,口感濃重,但都是木味。

2004 Louis Latour Chassagne Montrachet
清澈如水,礦物及青草香氣主導,及後出現木桶系的香氣,如奶油和堅果,口感及果味不俗。

2004 Louis Latour Ardeche Chardonnay
白起司的香氣,酒精嗆鼻,入口只有一陣檸檬酸。

2004 Louis Latour Duet Chardonnay Viognier
清澈、帶石榴,檸檬及花香,香氣吸引,但入口帶著生杏仁的苦澀。

2004 Louis Latour Meursault 1er Cru
?梨、椰絲、薑餅、奶油、堅果香氣,nose討好,中度口感,但只要是木桶的味道,餘韻微甘。

2004 Louis Latour Corton Charlemagne
炒芝麻、榛子果仁及一些香蕉精油香氣,酸度高如chablis,有點八香果味,木味不過份,ok。

2003 Louis Latour Bourgogne Rouge
淡紅色,燒塑膠的爛茶的味道,口感反而不俗。

2003 Louis Latour Corton Grancey
棗香,隔雜紙皮和少許花香、中度口感,甜酸度平衡,但果味不夠pure,有點枝梗的味道,餘韻帶苦澀。

2003 Louis Latour Marsannay
野莓香,入口平淡,ok。

2003 Louis Latour Beaune 1er Cru
葡萄乾及枯葉的香氣,酒精嗆鼻,入口偏甜,餘韻苦,像喝意大利veneto的酒。

2003 Louis Latour Aloxe Corton 1er Cru Les Chaillots
葡萄乾、巧克力及一些煙葉的香氣,入口很dry,相當粗糙。

我是寒命人!




原來,除了我的命格屬於寒命,我的體格也寒得出奇。昨天經朋友介紹,走到元朗求教一位中醫師,由過去病歷問到日常生活習慣,再問到家族遺傳問題,總之問長問短,問了大半小時,得出的結果是:我屬於寒底。

我一直以為唇乾暗瘡是躁熱起烘,故經常喝涼茶,原來大錯大錯,虛火不息,反而越弄越虛。坊間涼茶店的廿四味,清熱涼茶根本不適合我的體格。現在開始要煎服中藥,滋陰降虛火,固本培元。

至於喝酒,醫師說我們現代人煙酒應酬少不了,如果身體不是帶重病,就不需矯枉過正,可以適量喝酒,但同時也要喝喝滋潤湯水。

Decant後湧出煮桃的香氣, 莓子香及輕輕的芝麻香很吸引, 入口甜美, 好喝。

2002 Chateau Pichon Longueville Baron Pauillac
新桶香很濃, 咖啡, toffee, 蓋過果香, decant一小時才顯露莓子的香氣, 中度口感, 丹寧生硬, 餘韻有點苦澀。

1995 Bodegas Muga Rioja Prado Enea Gran Reserva
傳統的rioja, 淺紅色, 淡淡舊桶香, 玉桂, 煙燻及紅莓香吸引, 中度口感, 有點甘草的味道, 平衡好喝。

香得很厲害, 草莓, 桑子, 焦糖, 芝麻香氣吸引, 入口稍薄, 但餘韻的酸度和果甜令人回味, 非常好喝, 一貫舊派burgundy的風範。

2002 Domaine William Fevre Chablis Les Clos
開始出現成熟韻味, 帶著?梨, 檸檬和青草香, 入口很濃, 仍留有chablis的典型礦物味, 酸度恰到好處, 餘韻悠長。

2000 Leeuwin Estate Art Series Chardonnay Margaret River
金黃色, 只有一點梨子的香氣, 稍為瘦削, 酸度低, 一般。

1997 Greenock Creek Cellars Cabernet Sauvignon Barossa Valley很濃的藍莓香, 也有點薄荷及東方香料香氣, 入口稍甜, 餘韻的酸度驅走膩感, 不俗。

早操早死??????

京醫科大學附屬醫院內科主任、《外國醫學》雜志主編、美國醫學會會員、保健專家齊國力教授:

關於早上鍛煉的問題,在中國很多人就不清楚。我從國外回來,看到很多老頭、老太太早上5、6點背著寶劍就出來了。到了晚上,中國老頭、老太太都看不到了,都在家看電視呢。為什麼兩個國家差別怎麼大?這是他們不明白,不能怨老人,沒人跟他們講。早上鍛煉很危險,早上起來,人的生物鐘規律是體溫高、血壓高,而且腎上腺素比晚上高出4倍,如果你激烈運動,就很容易出事,容易出現心臟停搏。

98年開展長跑運動,北京市有據可查的已經跑死4個老頭了,如果再跑就壞了。有的黨委組織老頭老太太爬香山,而且一清早就去,上鬼見愁,說:“誰爬得快誰長壽”。這不知是誰的主意,我現在也鬧不明白。我告訴大家,如果這樣下去的話要犯錯誤,因為從領導開始就不瞭解保健。千萬不要組織這種活動,這是醫學上最忌諱的。我們不反對早上散步、做體操、打太極拳、練氣功。這是無可非議的。但是如果中老年人早上激烈運動,搞長跑,爬香山,有百害無一利,而且死亡率是很高的。你不長跑可能死不了,不爬山可能死不了,這叫死於無知,結果是自己害了自己。

Jacques & Fran?ois Lurton started producing wine in Argentina in 1992 and now have extensive holding in the Mendoza region, which is where 90% of quality wine is produced. Mendoza is situated on a plateau in the foothills of the Andes and ranges in altitude from around 450 metres to 1200 metres above sea level. Chardonnay grapes are grown at the higher altitudes, as the temperature is cooler which consequently lengthens the ripening process.

The vines for the Gran Lurton are exceptionally old and are planted are altitude. The yields from these plots are kept deliberately low by severe pruning. 2001 Rollin Pere et Fils Bourgogne Hautes Cotes de Beaune
淺紅色, 輕微的紅莓香, 但也有點不討好的燒塑膠味, 口感相當輕盈, 如同開水。

1990 Philippe Gonet Blanc de Blanc Vintage Champagne (Magnum)
金黃色, 成熟, 熱帶水果及烤土司香, 入口不俗, 有椰絲的味道, 好喝。

1994 Chateau Doisy Vedrines Barsac
杏仁, 焦糖, 蜜榶香味, 入口酸度低, 還有輕微礦物味, 一般。

2002 Domaine Verget Pouilly Fuisse Terroirs de Vergisson Vignes Dessus
水梨, 柑橘, 堅果, 奶油的香氣, 中度口感, 但餘韻帶苦。

2002 Domaine de la Pousse D'Or Volnay Les Caillerets
寶紅色, 棗泥和紅莓香, 香氣吸引, 還帶有輕微甘草香, 中度口感, 酸度低, 越喝越甜, 簡單易喝, 餘韻短。

2002 Domaine Frederic Magnien Nuits St Georges Les Pruliers
深紅色, 木桶系的香氣很濃, 甘藥, 薄荷, 咖啡, 還有點花椒八角的辛香, 只有少許藍莓的香氣, 口感濃而帶點苦澀, 丹寧很強, 酒精味也很強, 有喝liquer的感覺。

1997 Domaine Bertrand Ambroise Clos Vougeot
寶紅色, 莓香吸引, 也有點芝麻香味, 入口輕單薄, 但甜酸度平衡, 果味和木味融合得好, 不特別但喝得舒服。

2001 Chateau d'Arche Lafaurie Cuvee Madame Sauternes
蜜糖, 薑餅, 柳丁皮, 波蘿香, 香氣很豐富, 入口果味濃而酸度足, 好飲。
