勇於嘗試的 Cape Mentelle

越來越多澳洲酒莊栽種意大利葡萄品種 Sangiovese，保守估計逾一百二十家，多集中於維多利亞省和昆士蘭一帶，現在的「澳洲另類品種」的酒展（http://www.aavws.com/）就是演變自一些餐飲業人士於1999年發起的Sangiovese大賽和2000年的意大利品種酒展。過往亦有不少Sangiovese 在「澳洲另類品種酒展」中獲獎，包括Scaffidi Estates、Pizzini Wines、Dromana Estate、Dalzotto Estate，而2005年就有45支單一品種和16支混合品種參賽，結果取得2銀14銅的佳績。

現在，裁種Sangiovese的潮流已吹到西澳洲，著名酒莊也不因循守舊，開始嘗試釀造Sangiovese，Cape Mentelle就是其中之一。

第一次到訪香港的Cape Mentelle釀酒師 Simon Burnell表示，酒莊的名聲一直是由Cabernet Sauvignon打拼，但不會就此滿足，而是不斷作出新嘗試，繼成功釀造品質一流的 Zinfandel後，他們集中研究栽稙新品種，包括隆河的著名白酒品種Viognier和Marsanne，以及Sangiovese。

「不少澳洲酒莊都有試釀Sangiovese，但這品種很難駕馭，單是找合適的clone已花了很多時間，目前進展尚算良好，每年都會釀造幾百瓶作實驗，希望再過幾年就可以推出巿面。」Simon說。

Cape Mentelle位於西澳的Margaret River，是該區最優秀的酒莊之一，由已退休的釀酒業先鋒David Hohnen創立，於1970年栽種首批葡萄，並早於1973年已種植令美國酒業引以為儌的Zinfindel，現時園內葡萄佔地180公頃，旗艦酒品乃Cabernet Sauvignon。

Cape Mentelle 的Cabernet Sauvignon帶著bordeaux風味，以法國木桶陳釀，常常帶著肉桂氣息，而且擁有相當優秀的陳年潛質。前陣子喝過Simon Burnell帶來的1983 Cabernet Sauvignon，完全沒有老態，果味豐盈，而且有陳年Pauillac的影子。

As the festive seasons arrived, we came up with a special offer to close 2005 in Bubbles, Joy and Format !.

For the past 2 months, we've been very busy to secure a new agency and we are pleased to announce that we are now the distributor for the Exquisite Champagne Philipponnat.

Champagne Philipponnat is a family run house which owns a lot of vineyard in the area including a very rare 5.5 ha monopoly (Clos des Goisses). Only 2 Champagne houses have one, the other one being Krug Clos du Mesnil.

This champagne is mostly served in all the 3 stars restaurants in Europe and USA. It is very elegant, pure finesse due to the ageing on the lees (more than double than any other house). The Brut and the Rose are aged for 3 to 4 years (compare to 1.5 for most of the others) resulting in a late disgorgement (May and July 2005 for the Brut and the Rose).

With regards to the Vintage Clos des Goisses, it is aged on the lees for 10 years !! (instead of 3). The current vintage is 1991 and 1992 ! while most of the other Champagne offers their 1998. It is therefore a very rare occasion to try some 15 years old Champagne !!!
