Clos Apalta



多年前參加一個智利頂級葡萄酒品酒會,
結果 Almaviva 和 Clos Apalta 成為大贏家,
自始, 我每個年份都會喝 Almaviva,
唯 Clos Apalta 只喝過 1997, 1999, 2000.

在剛過去的在 Vinexpo,
有機會品嚐 1997 年至今的 Clos Apalta,
而且還是由 Michel Rolland 主持垂直品酒會,
隨即聯絡公關大員預留名額,
幾經轉折才能成功進場,
多個年份的 clos apalta 表現突出,
當中以 2001 年份特別優秀.

此外, Michel Rolland 還帶來了一瓶奇特的紅酒,
由 Pinot Noir, Cab, Merlot, Syrah, Carmenere 混合,
取名 "BOROBO", (BO=Bourgogne, RO=Rhone, BO=Bordeaux)
當天喝的是 2001, Point Noir 風味明顯,
BOROBO 已生產了三個年份,
Michel Rolland 說這個計劃會持續下去,
" 未來或許會混進其他品種, Who Knows" 他說.

盧永仁博士:「酒之淵博.可堪玩味」

盧永仁博士是香港電訊業的先鋒,於英國劍橋大學畢業後,加入麥肯錫顧問公司任策略顧問,先後在香港電訊和花旗銀行位居要職,也曾自行創業,於2002年加入上巿公司中國聯通,擔任執行董事兼副總裁,現在另覓發展。

他的辦公室座落中環中心七十五樓,俯瞰維多利亞港兩岸,盡有大地在我腳下之勢,他就在這裡建立商場上穩固的地位,但其辦公室不如電視或電影中的商業作戰指揮中心,並非佈滿股巿報價顯示屏,也不是滿桌經濟分析報告,其陳設反而極像酒商的工作間。

「我大部分時間都在辦公室度過,何不把最喜愛的東西都帶來這裡,把辦公室變成樂園。」盧博士凝望著四個電子衡溫酒櫃和一箱箱放在地上的美酒,流露興奮無比的神情,好比小孩走進了糖果屋。

除了酒櫃,盧博士的辦公室也放滿與葡萄酒有關的東西,例如Mouton Rothschild酒標海報、酒杯、開瓶器,以及拍賣得來的精鋼酒箱。這樣的佈置,對名成利就的商界精英來說並不稀奇,令人驚奇的卻是案頭上的深度讀物,包括講述Bordeaux產演變的Noble Rot、描寫美法酒壇大戰的Judgment of Paris、著名酒評人傳記 The Emperor of Wine,以及談加洲美酒的書籍等等。

「我喜歡每事問,查根究底,但並非每一種嗜好或玩意都值得研習。葡萄酒卻給我很大挑戰,其學問和故事可堪玩味。對我來說,葡萄酒是活生生的一回事,博大精深,總之越喝越不懂!」盧博士笑說。

其實,盧博士的酒齡只約十一年,他在英國修讀藥理學及遺傳工程學時只喝啤酒,偶爾才在學園聚上喝不知名的劣質砵酒,與葡萄酒無緣無份。直至回到香港工作,得一位前輩啟蒙,才真正感受葡萄酒之美。

「1995年,嘉禾電影公司創辦人蔡永昌先生給我喝1983 Chateau Palmer,那份醇厚至今難忘,自此集中鑽研Bordeaux,直至現在玩玩加洲酒,對葡萄酒的喜愛一發不可收拾,大大小小的品酒場合例必出席,不斷測試自己的選酒能力。」盧博士的描述,活像細訴男女相戀之路。

他還會走到葡萄園,實地考察收成狀況或裝瓶後的品質,以決定是否購入葡萄酒期權。為了有系統地找出個人口味和管理珍藏,他建立了一個電子資料庫,自行編製十大美酒排名榜,榜首是1961 Chateau Palmer,跟隨其後是1970 Chateau Petrus、而加洲酒Harlan Estate和Screaming Eagle則排榜未。此外,他也列出四瓶夢幻之酒,希望他日有機會一親香澤。

「酒友說1947 Chateau Petrus、1950 Chateau Lafleur、1982 Chateau Le Pin和1985 Domaine de la Romanee Conti Romanee Conti都好喝至極,驚為天人,所以我想喝,就此已而,沒有其他戲劇性的原因。喝酒毋須太多理由,想喝就喝。」盧博士說。

盧博士的生活都難不開葡萄酒,為紀念出生年而購入1961 Chateau Palmer,為紀念結婚週年而購入2000年Bordeaux,為搏取嬌妻一笑而搜羅與太太同名的酒品,即使籌辦慶生派對,也以葡萄酒設計遊戲項目,著嘉賓替當日的酒品評分比高低。

「葡萄酒是良朋好友相聚的好媒體,我希望將葡萄酒衍生的歡愉帶給身邊人!酒如人,人如酒,彼此不斷成長蛻變,十年前喝61 Palmer喝得感動,十年後的今天,能與舊友喝相同的酒,笑談十年人事幾番新,看著孩子長大,這不是人生一大快事嗎!」說罷,盧博士滿足地呷下一口美酒。

日夜在商場上拼搏的商界翹楚,卸下戎裝,也不過是太太的丈夫,孩子的父親和友人的知己。在維繫人情當中,葡萄酒起著微妙的化學作用。

亳不猶疑買了一只回家清蒸,
肉多膏多, 但不夠鮮味!

藍莓香誘人,lagrange 深度好一點,

可惜,不到兩天便火速售罄!

David: "So did you find a new lawyer for Mr. Charming?"
Gabrielle: "I don't want a new lawyer. I want you. So does Carlos, he just doesn't realize it yet."

He picks up a bottle of wine from the wine rack.

David: "Nineteen eighty-eight Romanee Conti La Tache. I'm impressed."
Gabrielle: "Look, to be honest, Carlos is a little threatened by you. He thinks if we spend too much time together that something might happen."
David: "Somebody's got an active imagination. Corkscrew?"

She takes the wine from him.

Gabrielle: "David, we're not here to drink wine, okay? This is business. Now you have to convince Carlos that he can trust you."
David: "How am I gonna do that?"
Gabrielle: "I don't know. Tell him you're happily married or gay!"

He takes another bottle out of the rack.

David: "Yeah, right."
Gabrielle: "You're a lawyer. You lie to juries all the time. Can't you just make something up?"
David: "I'm past the point in my career where I have to beg for work. I'm sorry."

She takes the wine from him again.

Gabrielle: "Okay, skip it. I'm holding my marriage together by my fingernails. If Carlos serves his full sentence, I don't think we're gonna make it. So please, I need you."
David: "I'll say this much for Carlos. He's got excellent taste…in wine. Montrachet. It's good stuff."
Gabrielle: "Are you gonna help me or not?"
David: "We'll go see Carlos tomorrow. I'll turn him around for you."
Gabrielle: "Really. What are you gonna say?"
David: "I'll play it by ear. I don't want to sound to over rehearsed."

David picks up a bottle of wine and walks out.

Gabrielle: "Hey, that's my wine!"
David: "Deduct it from my bill."

神呀!

奇蹟出現!



11/5/2006 於萬利酒城小聚,
2002 JJ Confuron Nuits St Georges Aux Boudots ,
沒有香氣,口感很內歛,餘韻苦澀,
三條大漢由下午六時喝到九時,也喝不掉一整瓶,
尚餘三分一帶返家,邊喝邊瀏覽網頁,

香氣口感沒有多大改善,
又剩五分一瓶放回冰櫃.

12/5/2006 晚喝過 1998 bordeaux 後,
午夜十二時再拿出來,傾進 Burgundy 杯待回溫,
不到十分鐘,不得了,香氣非常誘人,
帶著洋莓,紫羅蘭花香,香料,焦糖和糖漬李子的香氣,
口感柔順,只是餘韻還帶苦澀,
經過一日一夜的呼吸,奇蹟出現!

不幸


Corked, 阿們!

1995 Krug Vintage



愛酒人士對香檳品牌 Krug 應該不會感到陌生。Krug的六代傳人Olivier Krug最近來到香港,假半島酒店 China Clipper 推廣1995年份香檳,同場當然缺不了 Grande Cuvee ,還有 Krug Rose。作為釀酒團隊成員,Olivier形容1995年份香檳充滿過性。他笑言,Krug香檳如同家族的血液,他的三個孩子在初生當日已細嚐幾滴香檳甘露。

1995 Krug 帶有絲絲水梨、椰絲、蜜桃和蜂蜜的香氣,酵母香氣並不明顯,果味豐盈,而且酸度頗高,也有超長的餘韻。與對上一個年份香檳1990相比,我覺得1995比較華麗、奔放,甚至可用 Exotic 來形容,易喝易明,而 1990 則十分內歛,需要長時間陳年。無可否認,1995 Krug 是很好的香檳,但缺少了一份雅致。

只有 Cheval Blanc 比較開放,口感也輕豐富
其他兩瓶 First Growth 的香和味均內歛,
98 Ausone 很 Silky,Pavie Decesse 也不俗,
96 Trotanoy, 1999 Fery Meunier Chambertin,
2000 Faiveley Corton Clos des Cortons 口感很輕,
只有淡淡果味,乏善足陳,
1998 B. Dugat Py Charmes Chambertin 和
2001 E. Rouget VR Cros Parantoux 都好喝至極,
至於 1981 Vega Sicilia Unico 和 1990 Rockford Basket Press Shiraz,
全熟了,果香很好,喝得舒服!

寧波旅港同鄉會





星期五是工作天,又是不想工作天,人在辦公室,但腦袋早已丟到老遠,索性放縱一下,下午放假與老友同往Napa Valley Vinters品酒會,喝喝那些用木過度,苦到極點的高分葡萄酒。行前先祭五臟廟,走到中環的寧波旅港同鄉會午膳,六男一女吃了十個菜,包括烤麩、餚肉、膳糊、炸鳳尾魚、椒鹽元碲、油淋雞、鹹肉百頁、小籠包、鍋貼、家常餅,味道不俗呢!
